


Berry Pink Lemonade Popsicles
Popsicles scream “summertime”. And whether you’re four years old or forty, everyone loves them.
Here’s our favorite recipe that uses both fresh berries from the garden and lemonade from the carton, allowing you to whip these up in a jiffy and get the best of both worlds. This is a great recipe to make with kids, and you can use it as an opportunity to teach them the value of recycling as soon as the lemonade is gone.
Finally, if you don’t already have popsicle molds, just use whatever tiny cup or champagne flute you have lying around. When the mixture is halfway frozen, insert a popsicle stick!
Berry Lemonade Popsicles
Makes: 16 popsicles
Ingredients
- 1 cup of your favorite summer berries (blueberries, blackberries, raspberries are all great! Both frozen and fresh work well.)
- 2 cups pink lemonade (such as Minute Maid Pink Lemonade)
- Fresh lemon juice from 1 lemon
In a food processor or blender, combine pink lemonade, berries, lemonade, and lemon juice, lemon zest, sugar, and water. Reserve a couple of berries to add into the molds, after the puree is poured and partially frozen.
Pour the lemonade into popsicle molds. Freeze until somewhat firm, about 1 hour.
Slice the remaining berries and insert them into popsicle molds, using a knife to push them into the popsicles. The lemonade should be somewhat frozen to allow the strawberries to stay put, rather than float to the top.
Freeze until sold, about 6 hours.
